Ingredients
- 6 strips bacon, chopped
- 1 tablespoon olive oil
- ½ red onion, diced
- 2 tablespoon Gourmet Garden™ Garlic Stir-In Paste
- 5 large eggs
- 5 egg whites
- 2 tablespoon flour
- 1 tablespoon Gourmet Garden™ Jalapeño Stir-In Paste
- 1 cup shredded mozzarella cheese
- 2 cups chopped baby spinach

Preparation
- 1 Preheat oven to 350°F. Cook bacon in a large skillet over medium heat 8-10 minutes or until crispy. Remove from skillet and drain on paper towels. Wipe skillet with clean paper towel.
- 2 Add olive oil and onion to same skillet; cook 5 minutes or until softened. Stir in Garlic Paste and cook 1 minute. Transfer onion mixture to a large bowl.
- 3 Whisk eggs, egg whites, flour, and Jalapeno Paste into onion mixture in bowl until smooth. Stir in reserved bacon, cheese and spinach. Pour into a pie plate or quiche pan coated with no stick cooking spray.
- 4 Bake 45 minutes or until top is golden and knife inserted in center comes out clean. Let stand 5 minutes before serving.
