Ingredients
- 1 carrot, cut into matchsticks
- 1 tomato, finely chopped
- 1 large red onion, finely chopped
- 1 teaspoon Gourmet Garden Ginger, Lightly Dried
- 1 teaspoon Gourmet Garden Garlic, Cold Blended Paste
- ½ teaspoon Gourmet Garden ourmet Garden Lightly Dried Chilli, Lightly Dried
- 1 teaspoon Gourmet Garden Coriander, Lightly Dried
- 5 spring onions, finely chopped
- 2 teaspoon soy sauce
- ¼ teaspoon sesame oil
- 1 teaspoon vegetable oil
- 1 lemon, zest and juice
- 850-1000 grams whole snapper, or use fillets

Preparation
- 1 Pre-heat oven to 210˚C (190⁰C fan forced).
- 2 Mix all the ingredients, except for the fish, in a bowl
- 3 Place the whole fish onto a baking paper lined shallow baking tray and then cover with the mixture.
- 4 Bake in oven for about 18-25 minutes or until the fish is cooked through and fragrant.
- 5 Suggested serving with steamed rice and steamed Asian greens.
