Ingredients
- 1 cup panko breadcrumbs
- 1 tbsp olive oil
- ½ tbsp Gourmet Garden Lightly Dried Parsley
- 2 tbsp lemon zest
- 1 tsp Gourmet Garden Garlic , Cold Blended Paste
- salt & pepper to taste
- 4 x salmon fish fillets or fish of choice

Preparation
- 1 Preheat oven to 220°C (200°C fan forced). Line a baking tray with baking paper.
- 2 Place the breadcrumbs in a bowl and stir through the oil, parsley, lemon zest and garlic until well combined. Season to taste with salt and pepper.
- 3 Place salmon, skin-side down, onto prepared baking tray. Divide and press breadcrumb mixture onto flesh side of salmon fillets.
- 4 Bake for 10 to 15 minutes or until crumbs are golden and fish cooked through. Serve with roasted potatoes and steamed vegetables or salad.
