- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) whole kernel corn
- 1 jalapeño pepper, seeded and finely chopped
- 1 large red bell pepper, seeded and chopped
- 3 tablespoons Gourmet Garden™ Lightly Dried Cilantro
- 1 tablespoon Gourmet Garden™ Garlic Stir-In Paste
- 2 cups baby spinach, chopped
- 1 medium avocado, peeled, seeded and chopped
- 1 small lime, juiced
- 3 tablespoon olive oil

Preparation
- 1 Mix black beans, corn, bell pepper and jalapeño in large bowl. Stir in Lightly Dried Cilantro and Garlic Paste.
- 2 Add spinach and avocado. Toss with lime juice and olive oil. Serve immediately.
