Ingredients
- 1/4 cup fresh lime juice
- 1 tablespoon fresh lemon juice
- 2 tablespoons Gourmet Garden™ Gourmet Garden™ Ginger Stir-In Paste
- 2 tablespoons olive oil
- 1 tablespoon honey
- 2 ripe mangoes, peeled, seeded and chopped
- 2 medium sweet onions, peeled and chopped
- 3 tablespoons finely chopped fresh mint
- 2 pounds skin-on salmon fillets
- Lime wedges, optional

Preparation
- 1 Mix lime juice, lemon juice, Ginger Paste, olive oil and honey in small bowl until well blended. Stir in mango and onion to coat. Cover and refrigerate at least 1 hour or until ready to serve.
- 2 Preheat grill for indirect medium heat. Grill salmon, skin-side down, over indirect heat 16 to 18 minutes or until fish flakes easily with a fork.
- 3 Stir mint into mango salsa. Spoon salsa over salmon to serve.
