Ingredients
- 250 grams spiral pasta
- 1 punnet cherry tomatoes, quartered
- 1 large cucumber, diced
- ½ red onion, finely diced
- ½ cup kalamata olives, halved
- 2-3 tablespoons extra virgin olive oil
- juice of 1 lemon
- 2 tablespoons Gourmet Garden Parsley, Lightly Dried
- sprinkle salt & pepper
- ½ block (100 g) feta cheese

Preparation
- 1 Cook pasta as per packet instructions and set aside to cool.
- 2 Add pasta and all other salad ingredients except the feta cheese to a large serving bowl and mix well to combine.
- 3 Serve with crumbled feta on top and an extra sprinkle of Lightly Dried Parsley.
