Ingredients
- 1 pound (500 grams) ground turkey
- 5 teaspoons (20 milliliters) Gourmet Garden™ Lightly Dried Organic Parsley
- 3 1/2 teaspoons (17 milliliters) Gourmet Garden™ Chunky Garlic, Stir-In Paste, d
- 2 tablespoons (30 milliliters) finely chopped red onion
- 1 whole pita bread, toasted, then crushed to fine crumbs
- 1/2 teaspoon (2 milliliters) ground cumin
- 1/2 teaspoon (2 milliliters) thyme leaves
- 1/4 teaspoon (1 milliliters) ground black pepper
- 1 1/4 teaspoons (6 milliliters) salt, divided
- 1/2 cup (125 milliliters) plain Greek yogurt
- 1/4 cup (60 milliliters) grated cucumber, drained well
- 1 teaspoon (5 milliliters) lemon juice
- Pita bread, for serving
- Sliced tomatoes
- Sliced red onion
- Sliced cucumbers

Preparation
- 1 Preheat oven to 375°F (190°C). In a large bowl, mix ground turkey, 4 teaspoons of the Lightly Dried Parsley, 3 teaspoons (15ml) of the Garlic Paste, red onion, pita crumbs, cumin, thyme, black pepper and 1 teaspoon of the salt. Shape meat mixture into loaf about 2-inches (5cm) high on rimmed baking sheet. Bake 25 to 30 minutes, or until internal temperature reaches 165°F (74°C).
- 2 Meanwhile, whisk Greek yogurt, grated cucumber, lemon juice, remaining 1 teaspoon (5ml) Parsley, 1/2 teaspoon (2ml) Garlic Paste and 1/4 teaspoon (1ml) salt in a small bowl until well blended. Cover and refrigerate until ready to serve.
- 3 Thinly slice turkey. Serve in pitas topped with tzatziki sauce. Garnish with sliced tomato, red onion and cucumbers.
